For years, if you lived in Rigby and wanted a booth, a plate of pancakes at 8 a.m., and a burger at 6 p.m. under the same roof, you drove. Idaho Falls, Rexburg, or the drive-thrus on Farnsworth Way. The corner at 100 West Main sat empty. This summer, that math changed.
The Corner That Sat Empty for Eight Years
The lot where Me N' Stan's operated from the 1980s until 2017 finally has a building on it again. Crews with Northern States Development filled in the hole at 100 West Main Street where Me 'N Stans restaurant once stood after it was demolished in March 2021 after sitting vacant for four years. In its place, a two-story mixed-use building called The Hub. The 12,000-square-foot building will house 11 tenants across ground-floor retail and upper-floor condos.
That corner has a longer memory than most in town. About 100 years ago, the corner was home to a three-story building that housed one of the largest department stores in eastern Idaho — The Quality Store, a popular shopping destination for residents of Rigby and surrounding communities, until fire took it down in 1926. A neighborhood spends a century learning what to expect from a corner. Rigby's corner is finally saying something new.
What Actually Opened
Two names carry most of the weight so far.
Rigby's Patty Shack. Owned by Nick and Jenna Sylvester, occupying a ground-level space on the northeast side of the building, described by the superintendent of construction as a mom-and-pop hamburger joint that will serve breakfast, lunch and dinner. That last part matters more than it reads. City officials say a sit-down, mom-and-pop family diner has been the most requested feature in Rigby for many years. The Patty Shack's stated hours run 9 a.m. to 8 p.m. weekdays, later Fridays and Saturdays, and Sunday brunch until 2 p.m.
Lucy's Pizzeria. Lucy's opened its Rigby location on Main Street just across from the Rigby City Library in early 2026. It's the chain's seventh outpost. The Rigby store has a dine-in feature the city was asking for, with tables that can sit up to 60 people at a time, and beer on tap.

The quote is a marketing line, but the geography is fact. Rigby has always been between two bigger food scenes. What's new is that residents aren't required to drive to either one for a slice with a beer or a plate of eggs at a table.

Wednesdays Belong to South Park
From late spring through the first cold snap, Wednesday afternoons pull people away from the kitchen. The Rigby Farmers Market runs through October every Wednesday from 4-7pm at Rigby South Park, kicking off each summer when school lets out. The market transforms South Park near the fairgrounds into a hub featuring fresh, locally sourced produce, honey, dairy, and eggs, plus food trucks and artisan crafters.
The market answers a question every Rigby household negotiates by June: what to do with a hot Wednesday afternoon when nobody wants to cook and the kids are already outside. The answer is a three-hour window, walking distance from most of the older neighborhoods, that swaps a stove for a park bench.
The Old Guard Still Holds
The new openings don't cancel the places that have carried the town for years. According to the June 2026 Yelp rankings for Rigby, the reliable rotation still runs through:
- Lil' Mikes Smokin' BBQ — barbecue and catering, open until 7 p.m.
- The Graze Cafe — breakfast and lunch counter, coffee-forward
- New Star — the town's Chinese restaurant, still the reference standard locally
- Taqueria El Rancho — walk-up-and-order Mexican, priced to feed a family
- Cafe et Amour — coffee shop that reviewers describe as quality-forward with friendly service
- The Great Bambino — sit-down Italian
- Papa Kelsey's Pizza & Subs — the pre-Lucy's default for a Friday-night pie
- Teton Ice Cream Parlor — the after-dinner walk destination
- The Fizz Bizz — dirty sodas, the after-school stop for teenagers
Two produce stops sit just off Main and change the shopping rhythm entirely in August and September: Rigby Produce on North Yellowstone Highway and Silver Creek Produce on North Railroad Avenue. Both keep sweet corn and tomatoes stacked out front during peak season. Locals know the difference; visitors drive past both.
What Changed and What Didn't
Rigby's food scene didn't get reinvented. Nine or ten of the names on the map are the same names that were on it three years ago. What changed is a specific gap the city itself named. A sit-down family diner. A dine-in pizza place with beer. Both anchored to the same corner that had been a hole in the ground since 2021.
For a town of Rigby's size, the mix now looks unusually functional. Breakfast on Main Street, six days a week. Sit-down dinner two doors down. A weekly farmers market a five-minute walk away. Coffee, ice cream, dirty sodas, barbecue, Chinese, Mexican, Italian, burgers, pizza — all inside city limits, most of them family-owned. A visitor driving through on the way to Yellowstone still gets one impression of Rigby. A resident who ate on Main Street three times last week gets a different one.
The Bigger Picture on The Hub
Two of eleven tenant spaces are the anchors right now. Luxe Beauty Lounge is filling the southwest corner of the building, with owner Amanda Waters relocating her salon from Farnsworth Way where it operated for six years, specializing in color and extensions. Additional tenants are coming to the top floor and will be announced as leases are finalized, and two electric vehicle charging stations will be installed outside the building once it's complete.
Watch the upper-floor announcements over the fall. Every new tenant either adds foot traffic to Main Street or pulls it from somewhere else. The old bet in Rigby was that downtown was a place you drove through. The new bet, spelled out in 12,000 square feet of storefront, is that downtown is a place you walk to on a Wednesday.
If You've Been Away a Year
If you moved to Rigby in 2023, drove past the empty lot every day, and stopped checking on it, this is the update. That lot is a building. That building has a burger place, a pizza place, and a salon in it. Across the street, the library is still the library. Broulim's is still Broulim's. But the corner reads differently, and the way a Rigby family plans a week of dinners reads differently with it.
Come August, when the farmers market is stacked with sweet corn and tomatoes and the Patty Shack's patio is warm at 7 p.m., the picture will be clearer still. The best test of a small-town food scene isn't the ribbon cutting. It's the third Tuesday in a row that the booths are full.
